Not knowing the result, I can't imagine Bobby won that, but I have to give him mega props for going solo against Esther and Leah in a cooking culture that he is less than familiar with and coming out making food that looks edible. Honestly, he had almost TOO many handicaps on this one, he didn't stand a chance.

Yea, back in the day when he first started doing this "challenge chefs at what they excel in" thing, he'd win almost all of the time in a straight fight. He knows what works and what people like, which might not always be authentic--- as authentic usually means regional tastes that might not have wide appeal. I guess his showrunners (or Flay himself) noticed that and started doing handicaps, but at some point it became the norm and now they have no idea how to tone it down without it looking like Flay can't handle it.

I get a meal prep service delivered during the week because I am sooo lazy when I work and am going to school. I always order a lot of the Asian inspired dishes, and when heating up some spicy Korean pork with kimchi and white rice, I looked at the packaging and realized the chef who created the meal is Auntie Esther. Sheβs so good at what she does!
Giving Bobby credit for not knowing what the Cheusok holiday is (I don't either π ) and not having asian cuisine as his focus, he did pretty great. I gained some respect for Bobby Flay with this! But nobody deserves Uncle Roger's love more than Auntie Esther...I'm sure she knows what she's doing! π

The finding the pickle thing is actually a German Christmas tradition. Traditionally, the person to find the pickle (often it's an ornament) gets a special gift, but I think the gift in this case is just everyone screaming.

Cilantro is actually in a lot of Asian foods, it just goes by a different name. It's either coriander leaves or Chinese parsley. Coriander seeds are also common to Asian cooking. Cilantro is the leaves of the coriander, while coriander spice is from the seeds.
Nigel is British and that onscreen comment was for us. We call them both coriander and no-one would use 'Cilantro' as that's Spanish and we don't have a Spanish influence.

Actually putting soy sauce in the water is not a bad idea. The noodle will be well seasoned (just like putting salt in water when boiling pasta), and noodles will be coated slightly with brownish colour from soy sauce (especially if you canβt find the right type sweet potato glass noodles)
@@ciaochau2873 Glass noodles absorb flavor better than pasta, so you should just add flavor after boiling, no point in flavoring the water only to dump most of it away. Also, unlike salt, soy sauce is a combination of many flavors, so some flavors will stick to the noodles more, while some others will stay in the water more.

Side notes: we do put some soy sauce while boiling the glass noodles to give them darker color. The japchae came out quite not like the usual one (pale), probably thatβs nicer with calamari aka squid, which is also used a lot in Korean cuisine.

Bobby Flay deserves so much credit. He has to blind cook a dish that the competing chef has made thousands of times on this show, and he wins quite often. He may not be a fancy chef, but his versatility and speed is pretty incredible.

The joke is that Americans often have unhealthy diets characterized by use of fatty foods. Here, Bobby is making Fried Chicken and Mayonaise. These foods are the perfect example of being terrible for oneβs health due to the cholesterol and fatty oils. Additionally, the US is the only OECD country without universal healthcare. See King v. Burwell; see also NFIB v. Sibelius. Thus, Uncle Rogerβs joke is social commentary on Americaβs fatty foods and health politics. Also, I am American.

I've never had the dish so I can't attest to the flavor profiles. There is absolutely nothing wrong with seasoning the water noodles are boiled in though. I finally learned this past year that it's extremely common to do this. Usually it's a very strong flavor you want the noodles to carry into the dish. Garlic and onion powder are common for italian dishes. A lovely co-worker of mine does it for her buttery garlic noodles. She cuts back on the garlic in the butter sauce because of the infusion. It's easier for people that find garlic overwhelming. Maybe that was the goal? Was it sweet soy or aged? Trying to give her the benefit of the doubt.

I wish there was a Mexican uncle rodger (Uncle Juan), just someone very knowledgeable of Hispanic cuisine to diffrenate the different recipes for south and central American culture's
Feel like this is one of those few times a chef didn't deserve to get roasted even if the ingredients/technique weren't right. Bobby pretty much admitted from the start this is completely out of my wheelhouse, he basically had no idea what he was doing besides a few general recipes/concepts and off he goes. Feel like that's the equivalent of telling Uncle Roger to cook a Passover dinner and he doesn't know anything about Jewish cooking or dietary laws.
But I'd seriously want to compete on Uncle Roger's show. I want to sign up!

Right? He's doesn't really know this cuisine and doesn't have time to look it up, so he's making it up as he goes. But when they've got time to look it up and just can't be assed to, there's no excuse.
I have to say that Bobby has done some homework, though, and has probably learned some of the techniques and ingredients as a matter of interest.
I've been following Maangchi on KRclip (and her old website) for years and years, she's an excellent teacher, if you'd like to learn. My partner and I like Korean, Thai, and Vietnamese food very much, so we have made exhaustive efforts to be good at it. Thankfully, we live in a robust community of Vietnamese, Thai, Korean, and Filipino people, so we get to shop at their grocery stores. Get you some, if you haven't!
