I remember one of the first videos I saw by Chef Lee where his son asked him to make a $200 wagyu steak gourmet. He looked dead into his son's eyes and said, "It's $200. It's already gourmet." I've loved this man ever since.

I've watched a lot of his and his son's videos. That man is legit one of the best chefs I've seen. Definitely deserves the uncle title 100%.

I'm going to vouch for Bokksu actually, I was subscribed to them awhile back until I switched to Keto for a good while but while I had it it was awesome. I remember a while back I brought up the idea of Iron Chef Dad doing a collab with Uncle Roger and people didnโt like the idea but now I see Uncle Roger react to one of his videos. Who knows maybe they will do a collab.
You can use a metal utensil on a non-stick pan as long as you don't directly scrape on the pan with it. The iron chef didn't scrape the bottom he was kind of folding the top.
he's a pro chef who's done it so many times that walking over to get a wooden spoon or spatula or whatever is a waste of time

He scraped it with the metal spoon when plating tho
My girlfriend and I ate Panda Express for the first time the other day. I'd say for Americanized Chinese food it wasn't half bad. I was just shocked that they actually had to wok stations in their store.
Yeah Panda Express is not bad at all, especially when the food is fresh. If the staff is friendly you can ask them whatโs being cooked in the wok right now and order that. I donโt know why anyone orders their noodle or fried rice, theyโre both bad. Just get plain rice. Their Kung Pao chicken is the best Chinese American KPC Iโve ever eaten; itโs not sweet like at almost every other restaurant. All of the chicken dishes are decent actually. Orange chicken is sweet af, so avoid if thatโs an issue (I do). Their limited run shrimp stuff is good also.
Chef Lee is one of the most original and creative chef I have ever seen on KRclip.
"Use the right amount not the white amount" is still my favorite and most used Uncle Roger quote by far
"Egg fry rice very simple dish, only three ingredient: Egg, Fry, and Rice!" -ultimate Uncle Roger quote.
Looks like aunty roger haiya
Fun fact, in Indonesia there is a dish called Magelangan. It's basically a combination of fried rice and noodle. The food ain't suppose to go togather un everyone's mind but it did. And it was really good. If you go to Indonesia I suggest trying it as well as a lot of other foods from there especially the street food
Where does it served? Never heard of it, nwver seen it. For me it is bad idea to eat both rice and noodle at the same time (except in this video). I'm amazed how some Indonesians like to have overload carbs. It's imbalance diet!
@mayaparamita2254 Well, Magelangan, I forgot the origin. I think maybe it was from Central Java or Yogyakarta, but correct me if I'm wrong. You can find the food in Java like Jakarta, Bandung, or other places (I don't know outside Java if it sells them). I have to admit it might sound weird, but trust me, it was good. The different texture of fried rice and fried noodle really stands out.
Though I kinda agree that overloaded carbs are bad. But compared to American portion foods, we are still healthier, in my opinion. Fun fact, there is a famous brand of noodle in Indonesia called Indomie. We Indonesian eat the fried noodle with rice. Sounds strange, but it was good. It really is food that I usually eat when I don't have money. The noodle kind of became the topping with rice
Making gourmet meal is one thing but turning crappy food into gourmet meal is another cool skill. Chef Lee is one of the greatest chef out there.

11:38 That's not a beetroot, it's a watermelon radish. It has the right texture and flavour to accompany something this flavourful. It's more of a pallet cleanser.
yes, the skin of it is kind of green and shows that it's not a beetroot. In Chinese, it's called ๅฟ่ฃก็พ

@@kyle0091000 I think the radish usually grows at higher latitude? so that's wht
I thought it wasn't quite the right colour. Not that I'd mind, as long as it's not raw beetroot isn't actually that bad.
@@bravery2047 To be fair, watermelon radish can be found in Asia (seen them in China, Taiwan, Singapore, Malaysia - places that Iโve been to that is), as well as North America (seen them in USA and Canada). Calling watermelon radish as beetroot is like calling shallots, onions (heck, shallots and onions are in the same family, whereas radishes and beets are not). Also, beetroot is purple & reddish throughout (from the outer layer of skin to the centre) - itโs a dead giveaway๐คท๐ปโโ๏ธ

I don't think he'll ever need one. He went over to Japan, became the number 2 Iron Chef on that program, came back to America and became an American Iron Chef, and then became the best one we had here. His uncle title was earned a long time ago. He more like God-Uncle now.

YES. I've been waiting for Iron Chef and Uncle Roger collab. Hope Iron Chef gets his Uncle Title.
I worked at Panda Express for a year and a half as a lead cook. No. They don't use MSG, and whoever made his food, did not make it to policy. First of all. You can tell they were short on ingredients and instead of 86ing their product, they kept serving it without what they didn't have. So the chow mein had too much oil, and clearly wasnt cooked with water in the wok. Plus i can tell it was visually undercooked. The fried rice looked like the end of the night friend rice they make when they run out of basic rice and decide to use the rest of the brown rice that no one buys. Yeah, it's against policy but i have seen multiple locations do it, so i wouldnt be surprised. Also, they didnt have all the ingredients for the fried rice either. With the honey sesame chicken, that was clearly sitting out long enough for the green beans to wilt, either that, or they stuck it in the fryer, forgot it was there and then used it anyway after they burned it. In my time at Panda, i learned a lot of good technique, but only because i cared about what i was doing. I wasnt like most of the teenagers there who were just using that job to pay for necessities and school and whatever else. I was there because i knew it was a stepping stone to something better. I wanted to keep cooking. And i still am. Im now a line cook at McMenamins pub and grill, and this is my 2nd line cook job since i left Panda.
I love this guy, glad you reviewed him, Uncle Roger

Uncle Roger forgot he's an Iron Chef, he is so skilled that he can use metal fork in non-stick pan to stir the ingredients without ever touching the fork to the non-stick surface. It's non-stick pan hei. ๐๐
It's impressive enough that Uncle Roger refers to Chef Lee as "chef" rather than "nephew" or "uncle" already.
Just a little comment: best nonstick pans are ok with metal, but only blunt hits.
No scratching or cutting.
And i think ICHD used it just right.

It also looked like he was just touching the food when he was moving it, not touching the pan.
@@nerrickk9024 You can pretty clearly see pan contact at least a couple times. Not a big deal though. And I think the red pan is ceramic coated cast iron, at least that's what it looks like to me.
@@Mad-Lad-Chad It's a Staub enameled cast iron skillet.
True. If you can control it, you will barely touch the pan.

Uncle Roger, next time your in Australia, you gotta try an Aussie Hamburger from a local fish and chip shop. Chunky beetroot and pineapple.. Might even like it better then fried rice?
The thing is, we live far from real Chinese food, 60 miles from Chicago, but there is a Panda Express here. For $32.00 I can feed my family of three for two entire meals, and frankly, it's tastes just fine. No, we KNOW it's not from Chinatown, but still. We've paid 32 bucks for burger baskets from Culver's for one meal. So put it in perspective.
I subscribed to his channel long time ago. His son always asked him to turn everything into gourmet ๐
So thrilled I live in a city with a Chinatown! Also, to be watching Uncle Rodger view Uncle Lee, a fabulous chef.
Mr. Lee is an absolute gem. I follow his channel. He's such a cool dad.
Uncle Roger never loses an opportunity to flame Jamie Oliver ๐
Chef Lee and Uncle Roger is the crossover we need!
+99999999
Also, I think when you have sit-down restaurant standards for a fast food restaurant it's kind of unrealistic. To be able to make, sell, and preserve food for long moments it's normal that the flavor profile is going to be overly sweet or salty and even very oily. If you use a tiny amount of salts/sugars/oils then people will complain that the dish has no flavor and that chain will go out of business.
I kinda wanna see Uncle Roger react to how our Asian parents rate Panda Express. Many of our parents generation like Panda Express and think itโs real Chinese food, for the most part.
I was at KLIA a few months ago and the Taco Bell beside Jamie Oliver's restaurant had more customers than Jamie's restaurant which was pretty much empty, it was hilarious
given the price difference, i would not expect it the other way around. Of course a lot of people had the runs after they had taco bell.
I prefer my local hole-in-the-wall style restaurant but every now and then I get a craving for Panda Express even if it ain't authentic and very oily.
This man isnโt just the best chef, he is the best father, the most intellectual, and the best man to walk alive.
ok relax lil bro
Orange chicken as we know it today was invented by Andy Kao in Hawaii at Panda Express. Yes, Panda Express invented orange chicken as we know it. The original orange chicken with its origins in Hunan didn't use breaded chicken. It was also made with leftover lemon and orange peels. It wasn't as sweet or heavily flavored with citrus as it is today.
Uncle Roger, those are Watermelon Radishes, not beetroot .They have a texture and bite similar to daikon but a bit sweeter
Doesn't look like beetroot, more like pink radish, wich is a whole lot better, and also originally comes from asia.
Thanks for the weejio!
Love Chef Lee! Watched him on Top Chef Masters years ago and was amazed by his skill.
I actually like Panda Express, its no where near authentic, but to me its still good in its own way. When I actually want like actual Chinese food, I know a small local spot to go to, but I'll give credit where credits due and Panda Express got me first interested in Chinese cooking and I actually learned how to make a lot of Chinese food because of it, like Yangzhou Fried Rice.

Actually Nephew Rodger, Panda Express very proudly states that they DO NOT USE ANY MSG! However, you would be surprised to find out that Kentucky Fried Chicken and Chick-fil-A have MSG listed in their used ingredients.
Love Susur Lee's videos. Makes instant food, microwave meals, snacks, and takeout food into a good meal
He also has videos of him doing good food way before youtube and the trend of turning trash into ,well, let's be honest, slightly tastier but way overcomplicated trash food. If you are going to take the time to cook, don't use fast food. Makes for great edited video maybe, but would be a waste of time in reality.
Ironically enough, Panda Express is an outgrowth of a real gourmet restaurant. About half a century ago, a guy described as "a master chef from Taiwan" (he was really from the mainland) opened the Panda Inn in Pasadena, California, and became so successful that he and his family opened the first Panda Express in a nearby shopping mall about a decade later. They were under no pretension that the Express would be on par with the Inn, only that it would make the chef's work more accessible to the public. The quality of the Express has declined over the years and seems to vary by location.
The hate for beetroot is undeserved. In central and east Europe we love it as salad , in soup as a side dish as food colour. For Example where I am from we eat it with spiced meat stew, pickels and boiled potatoes. It's high in potassium, iron and Vitamin B , and it can lead to your piss becoming red.
Susur Lee is one tough critic
Also Iโve been to his restaurant! Experience!
Beetroot is awesome, especially a soup with little "pierogi"
The rice box with kung pao chicken with a packet of chilli and soy sauce is not half bad, even if you have to ration the chicken like you're on the eastern front in 1944
I think he need to make Jamie's food gourmet

You can grill beetroot with a bit of oil and salt and it is amazing. I have no idea what store bought beets taste like but my uncle's are amazing. Slightly sweet so they char really well. Grilled beets, would recommend.

I love watching the Iron chef dad videos , it reminds me of how i cook when im with my son. If you don't like purple beets, I recommend trying golden beets; milder flavor and no purple mess everywhere. Not in fried rice, though.
