To be honest, doesn't seem to be too complicated. Just very, very time consuming. Having a large fridge and special oven certainly helps as well.

Hey Uncle Roger, it's funny you mentioned the joke about him starting his journey as a chef at like 2, I did start my chef journey at like 2. My mom caught me trying to cook numerous times on the floor. Had the pan out with some eggs and cheese trying to make scrambled eggs but I had no heat on the floor to actually cook them π 26 years later, now 28. I cooked in restaurants from ages 14-26. Some of us really do start that journey basically from birth haha

Great timing! My dad worked in Cantonese restaurants for decades. Glad to see the recognition finally. We also happened to make Peaking duck just 2 days ago at home! I used my weber grill and rotisserie.

To think, this all just started from Nigel making occasional videos out of nowhere with the character. A year or two later and hes doing full on tours, collabing with renown michelin star chefs around the world, and his entire channel is now just dedicated to Uncle Roger. The hard work paid off in spades

After watchingyou talk all the time about your rice cooker, I finally bought one (we already have two other brands). I haven't cooked rice in over 30 years (not since Uncle Bens boiling bags). My wife and daughter do the rice as they eat it everyday (this white boy likes his potatos!) Having watched so many of your videos, I tried it the first time when it arrived. Jasmine rice, chicken broth, measured with my fingers(the way my wife does it). Push start, come back when the alarm goes off. OMG the rice was the bomb, wife and daughter will not make it any more, now its my job! Haiyaa!

I havenβt been to China in 4 years and this just brings back so many memories I had there when visiting. My grandma would bring me to eat Peking duck like this.
The best part of this is that Chef Samuel clearly uses haiyaa as part of his everyday vocabulary as well. I think this might be a first.

I owned a restaurant that made world cuisine that changed every week-end. I was the executive chef. I made Peking Duck only once because it is a pain in the butt. Best part was I didn't warn my servers that the ducks were hanging in the fridge. They walked in and lost their minds haha. But that glass skin. Amazing.
Definitely one of those iconic dishes that to be made from absolutely scratch - nearly more or less unachievable at home - the really hardcore authentic places wood fire it vertically.

Without a doubt - my favorite dish of all time. Add a dozen of those little white Chinese buns and I am a very happy man. And a bonus; most of my friends think "wild duck" which is not like the duck you get raised in eastern Canada from a Chinese farm, but that leaves more for me! Too bad they are so expensive (5X Chicken) where I live or I would eat them monthly. After this I will dry my duck better but remain stuck with my old rotisserie short of having a good restaurant with Crispy Duck.
